500 gr. linguine
2 colorful peppers cut into pieces
2 spring onions chopped
10 cherry tomatoes cut in half
2 cloves Garlic chopped
half a glass of fine olive oil
1 shot of cognac
3 ripe tomatoes grated

The lobster spaghetti of Itea is one of the most delicious I have tasted after that of Skyros. Maistrali is famous for the fresh fish and lobster spaghetti that you enjoy right on the beach. Of course it is not one of the low cost meals but a lobster spaghetti marks the summer, so we can enjoy it even for an anniversary day for us…

Lobster spaghetti

In a saucepan with a little hot olive oil, sauté the peppers, the cherry tomatoes, the spring onion and the garlic and mix.

Cut the lobster vertically and sauté it together with the peppers and the rest of the ingredients.

We quench with brandy and add the grated tomatoes.

We boil the al dente pasta in salted water according to the indication on the package and strain it.

We add a little water from the pasta to the lobster sauce, to bind better.

Once the many liquids are absorbed, add the pasta.
