Ingredients

4 cups self-rising flour sifted
150 gr. fine butter at room temperature
1 ½ cup granulated sugar
5 eggs
250 gr. full fat yogurt
3 tsp. baking powder
1 tbsp. Orange zest

2 ½ cups granulated sugar
2 ¾ cups water
orange zest
Juice of half an orange

Macedonian Yogurt Pie

Delicious and very Greek…

Yogurt pie is a very good dessert for cooling the palate especially after a meal with fish. My friend Eleni, who makes sweets with special mastery, mainly traditional, cuts the yogurt pie into small pieces and puts them in the middle of the table.

Sometimes it is served with ice cream or cool yogurt and thin slices of dietary fruit, such as this sour apple. .. so as to laugh.

The recipe is from her Macedonian grandmother from Aiani, Kozani, she always prepared it for such festive days of summer that family gatherings were in full swing…

We put the egg whites in a clean and dry bowl and we beat with the hand mixer until they become a meringue and we leave it aside.

We put the butter with the sugar in the bucket of the mixer and we beat them hard with the whisk for 7 to 10 minutes until they are "fluffy".

We turn off the mixer and we add to the bucket the egg yolks, the yogurt, the orange zest and we beat them all together for a while at high speed until the mixture is homogenous. We reduce the speed of the mixer, we add the baking powder and little by little the sifted flour and at the same time the meringue. We beat them lightly for a while until the mixture is homogenous.

We butter lightly and we add a little flour to the pan and we pour the mixture.We bake in a preheated oven at 180 ° C for 50 minutes.

We dip a knife in our pie and if it comes out dry the yogurt pie is ready, otherwise we leave it for another 10 minutes in the oven.

We prepare the syrup. We put the water, the sugar, the zest and the orange juice in a saucepan and we boil them until they "thicken".
