Madeleine cookies with aromatic herbs


For 2 Madeleine cooking molds
150 ml. fresh milk
3 eggs
20 gr. Thyme honey
1 baking powder
250 gr. flour for all uses
250 gr. margarine
1 pinch sugar
1 pinch salt
1 tsp rosemary fresh and chopped
1 tsp spearmint fresh and chopped
1 tsp Basil fresh and chopped
1/2 tsp Ginger grinned
1/2 tsp pink pepper
For sprinkling the form
70 gr. flour
50 gr. margarine

The original French recipe


Madeleine cookies are delicious, aromatic, fluffy and they have their own history. The French named them small cookie-cakes.

Tradition says that they appeared for the first time in madlen_murwdika_2the dinning table of the duke of Lorraine at the  tower of Comerci, at the end of the 18th century, in a closed dinner with Voltaire as a guest. The confectioner of the tower was so stressed because he knew that Voltaire was a perfectionist and for an unknown reason… he left while being mad and took the desert with him… The maid came to the rescue by making small deserts from a recipe by her grandmother. It was such a big success that the duke agreed to give the name Madeleine, to the cookies. After the second world war the cookies became popular and then on, we also come across their sweet and creative version. We give you the recipe with honey and aromatic herbs.

Madeleine cookies with aromatic herbs

In a pot we slightly warm up the milk, we add honey and stir until the honey dissolves.


We pour it in the mixer bowl and add eggs, butter, salt, sugar, pepper, the aromatic herbs and flour at last with the baking powder. We mix it with the hook of the mixer until we have a nice soft dough that sticks out of the bowl easily.

6 hours

We place the dough in a metallic basin and let it in the fridge to rest for 6 hours.


Later we remove it and stir carefully.

7 min.

We sprinkle flour and spread cold margarine on the cooking molds for Madeleine and we bake in a well preheated oven at 250°C for 7 min.


We let them cool down and take them out of the mold.


Little Secretes :

If we want we can pour the dough in a icing bag and fill the mold so we don't make a mess.
