Melomakarona bites and melomakarona with chocolate

Ingredients

125 ml orange juice
250 ml sunflower oil
50 gr. Thyme honey
90 ml water
100 gr. sugar
5 gr. ammonia
5 gr. cinnamon
3 gr. cloves
1 shot of brandy Metaxa 5 or 7 stars
1 dose of vanilla
Zest of one orange dewaxed
500 gr. soft flour sifted
7 gr. baking powder
120 gr. Fine semolina
FOR THE SYRUP
500 ml water
800 gr. sugar
500 ml glucose
50 ml honey
Half a Lemon cut into 2 slices
FOR SPRINKLING
Walnut Chopped
Thyme honey
SECOND RECIPE
BITTER CHOCOLATE COATED MELOMACARONA
200 gr. chocolate couverture
1 tsp. seed oil
200 gr. Walnut broken, in the middle

Two recipes for the traditional Christmas dessert.

Christmas is coming… and we should get ready as soon as possible and get into the Christmas mood by decorating the house and making the customary sweets. Melomakarona have an uplifting taste and a special aroma. We asked the famous chef Sotiris Laskaridis to prepare melomakarona for us using the incredible brandy Metaxa 7 stars. The excellent product can be enjoyed after a good dinner, accompanied by dark chocolate or even a cigar… We made sure to tie it harmoniously with the chocolate or the most classic melomakarona, using it even in their preparation for a fine taste.

 

Today the day demands to “create” our own sweet flavors to give joy to our people…

Melomakarona bites

First we make the syrup.

We put all the ingredients for the syrup in a saucepan and we stir until it boils and the syrup "thickens".

In a large bowl we put all the ingredients in order except the flour, the semolina and the baking powder.

We stir vigorously with our hands.

Sifting, we add the rest of the ingredients.

We knead vigorously, incorporating the other ingredients.

The dough is ready as soon as it comes off the walls of the bowl.

We form into small small balls and we place them on a grill and we press lightly to imprint the shape on the dough or we press with a fork or using a small grater.

We put the melomakarona in a pan lined with baking paper at a distance from each other.

25-30 minutes

We bake in a preheated oven at 180° C for 25-30 minutes.

Once the melomakarona come out of the oven, we put them one by one in a slotted spoon and we "dip" them in the cold syrup for seconds.

We serve on a festive plate, sprinkling with chopped walnuts and maybe thyme honey, for a super taste.

HOW TO COVER MELOMACARONA WITH CHOCOLATE

Finely we chop the chocolate and we melt on low heat in the bain-marie.

We place the stainless steel utensil on the mouth of the pot, we put water on the base of the pot and we boil over medium heat until it starts boiling. Then we add 2/3 of the chocolate, we turn off the heat and we mix with the rubber spatula.

Once the first dose has melted, we add the rest of the chocolate and we stir until we have a chocolate with a smooth texture.

The secret to make the chocolate shiny is to melt it in 2 portions so that it melts gradually and at the end we add 1 teaspoon of seed oil.

We spread the melomakarona on a grill on a baking tray and we pour the melted chocolate over them.

We put half a walnut kernel on top of each melomakarono.

We let it cool for about 2 hours and then the "raids" begin…
