Ingredients

2 tbsp. corn flour
2 cups sugar
2 eggs fresh
1 vanilla

4 sheets for pies rustic or leaves for galaktoboureko (custard filled pastry )

Zagorochoria is one of my favorite places. The stone bridges, the paths, the clear waters, the gorge of Vikos, the crystalline Voidomatis, the stone houses and the wonderful nature are for me a pleasure, I fill my batteries and I continue the lonely sometimes road of the eternal traveler…

The kitchen is particularly rustic with authentic milky touches… Their pies are special such as the Zagorian flour pie, the cheese pies and the milk pies…

Every time I pass by Ioannina and Zagorochoria it means that I especially appreciate the bougatsa, especially that of Select in Ioannina and milk pie where I find it.

Giannoula prepared the best milk pie with rice and told me that this is the authentic Epirotic recipe, as her grandmother made it.

Milk Pie from Epirus with rice

We put 2 cups of milk in a bowl and we melt the sugar, stirring with a whisk.

In a large saucepan, we boil the rice with water for 5 minutes.

We add the milk and as soon as it boils, we add the corn flour and immediately after, we add the milk with the sugar.

In a bowl, we whisk the eggs.

After it boils, we take the pot off the heat and as soon as it cools slightly, we add the eggs and vanilla.

We butter the pan and we spread the sheet then we spread the second sheet and we sprinkle a little with sugar and cinnamon.

We put 2 more sheets buttered and at the end we add the rice cream.

We spread the the surface of the cream with the wooden spatula and we turn the sheets on the edge.

We bake in a preheated oven at 180 degrees and bake for 45 minutes until golden brown.

We sprinkle with cinnamon and we leave it to cool.
