1 tsp. vinegar
2 1/2 tbsp. olive oil Extra virgin
250 ml water
FOR THE FILLING
800 gr. Feta cheese hard
10 eggs
3 ½ cups fresh milk
Half a cup of olive oil
A little salt
freshly ground peppers
1 shot of Ouzo
1 tsp. fresh mint very chopped

1 egg yolk

An authentic mountain cheese pie, cellar flavor with rustic touches. It can’t be tastier…

We open the leaf very easily, with the recipe of Marina and we choose a nice feta, milk and the aroma of mint together with the ouzo give taste and aroma.

Marina is a young girl, a scientist from Athens, who lives by choice in Dichori, in the heart of Vardousia. She cooks dreamily in the “Village Shop”, she takes care of her garden and we enjoy the flickering fireplace.

Outside, nature is epic; so much so that you glorify the Creator, after all, our lonely bell reminds Him so strongly. Heavy snow has covered the square with the plane trees and we, at the instigation of Marina, take a walk in the waterfall which is almost frozen .. and I try with my camera lens to capture the unique images, the play of light, the tall fir trees and the stone passages .

FIRST WE PREPARE THE DOUGH FOR THE SHEET

We cut into 6 equal parts.

We put all the dough balls in a large bowl and we sprinkle with flour.
