Mountain spoon sweet cherry

A dream…

The cherries at their best and the first cherries are the best to make winter sweets. So we “capture” in glass jars the colors and flavors of spring and summer.

With this sweet we can make incredible Cheesecake. We can even pour the sweet cherry over yogurt or it just accompanies the afternoon coffee or tea.

One of the most beautiful ones I tried was this one in Dichori, Vardousia, my favorite village which is the cradle of gastronomic culture. In the same way we make the sweet sour cherry, the wild sour cherry, the black cherry.

We wash the cherries well and then we remove the core with the special tool or with a hairpin.

We bring the cherries to a boil with the sugar and we add the glucose.

20-30 minutes

We boil them for 20-30 minutes and we skim constantly.

We leave to cool and the next day we boil the cherries for 20-30 minutes, until it sets.

To check that the dessert is properly thick o na plate, we pour the syrup and open with our finger "a path" as the locals say.

If this remains open it means that the syrup is thick otherwise, we boil it a little more.

After it cools down, we put it in jars. We close tightly.

We turn the jars over with the dessert overnight and in the morning they are ready.

The jars with the dessert are kept for a long time in a cool and dark place. When we open them, we keep them only in the refrigerator.
