6 potatoes sliced thinly
6 pumpkins sliced
3 eggplants sliced
3 carrots sliced
1 pepper red, sliced
2 dry onions sliced
2 clove garlic chopped
2 κ.σ. Parsley chopped
4 tomatoes peeled and pastured on the grater
1 κ.σ. honey from pine trees
1 cup olive oil exquisite
1 pinch of salt Sea salt oregano
2 Bay leaves rosemary
Sea salt
Freshly grated peppers

A mouthwatering creation with pure Greek origin that entails all the aromas and flavours related to spring.

I remember we visited the Monastery of St. Dionysios En Olympus at Mount Olympus a year ago. There they treat us to a briam  with vegetables from their garden and an amazing cheese they produce at the Dairy of the Monastery.

This is a unique delicacy since the monks cultivate vegetables of their local varieties, the olive oil is of their own production and the cooking is by the hand of Father Porphyrios.

After we prepare and cut our vegetables as described in the materials we get a large baking pan.

we pour some olive oil and strawberry, potatoes, onions, eggplants, pepper, carrots, garlic.

Inside in the grated tomatoes, we add a splash of water that has broken up the honey to sweeten the acidity of the tomato.

We surround the brims with the tomato and the remaining olive oil.

We sprinkle with parsley, pepper, salt, oregano and we put inside the vegetables 2 leaves of laurel.

Bake in a well preheated oven at 180 degrees for 1 hour.

Shortly before the end, turn the grill on for 5 minutes to get a golden color.

Remove it from the oven, let it cool down and serve.
