Ingredients

FOR 6 PERSONS
2-2.5 kg octopus fresh
1/2 lt hot water
2 bay leaves
200 ml apple cider vinegar
150 ml olive oil
FOR THE SAUCE
300 gr ketchup tomato
50 gr garlic puree
100 gr waster sauce
400 ml Mavrodaphne wine

A delightful Chios creation with a special aroma that Charalambos has prepared for me.

We combined it with fried potatoes and enjoyed it in the courtyard of the mansion next to the marble fountain. Chios is a beautiful island a truly gastronomic destination that smells mastic.

The mastic villages with the castle towns and the scratches in the houses dazzled me like the seas of Chios. It is a destination worth visiting …

Octopus with sweet wine

In a deep saucepan simmer the octopus in the water with the bay leaves, vinegar and olive oil. In 30 minutes our octopus will be ready.

Strain and let it cool down.

We keep a little of the broth.

We cut the tentacles in two or if we want into smaller pieces.

In the broth add all the ingredients together and mix lightly with a wooden spoon.

Finally add the Mavrodafni and octopus and let it simmer for 25 minutes until glazed.
