2 kg octopus
1 green pepper
1 red pepper or half red, half yellow
1 Carrot
olive oil
2 glasses wine red
pepper 10 grains
1 tbsp οregano
4-5 bay leaves
Parsley a little fresh
vinegar from strong wine

The Cycladic recipe that takes off…

The first time I tasted the octopus with the peppers was in Tinos, there by the sea and the taste of it has truly been written to my tasteful memory.

The second time I tasted it by Spyros Nakos and suited it harmoniously with a strong ouzo of Varvayannis that I enjoyed by putting inside cold water because that’s the right way to drink ouzo and not by putting ice cubes that alters its taste. The dining experience was even better.

I asked Spyros to give us the recipe and he did it gladly…

Octopus with peppers and aromatics

Done

Clean the octopus by removing the eye and the mouth. Rinse it with plenty of running water

Put it in a pot with the wine and add the bay leaves, the pepper grains and a glass of vinegar. Stew in low heat with a half covered pot for 1 hour until the octopus is softened.

When stewing check its liquids and if necessary add a little hot water.

Once the octopus is boiled and softened, remove it and drain it with the strainer.

Prepare our vegetables.

Wash, purify and cut the peppers into cubes. Pare the carrot and cut into cubes or thin rings.

Once the octopus cools down, divide its tentacles and cut them into rings as well as the rest and place it in a large bowl.

Add the peppers, the carrot, the oregano and the parsley cut with our hand.

In a bowl, add three parts of olive oil and one part vinegar and beat with the balloon whisk firmly in order to make the oil sauce.

Blend it firmly and pour it on the octopus and all the ingredients, shake the bowl and cover it with a cap or shrink wrap.
