300 g mandarins cleaned without pits
1 Apple green ,cleaned
2 kg sugar
3 glasses of water
1200 g granulated sugar

Orange marmalade of Nafplio

A surprise from the orange production area

 

The father was from Nafplio. It is my favourite place and every mountain, village, road, path are familiar to me as well as their flavors and tastes.

Nafplio is an atmospheric city, with cosmopolitan air, as it was the first capital of Greece. My cousins and my grandmother always made marmalade in the winter. This season the oranges have a unique sour and aromatic flavor.

Because there is an abundance of citrus fruits, they make the jam from famous lemons of Argos, and aromatic sweet mandarins.

The apple was the secret to thicken the marmalade. The quantity of sugar varies according to one’s preferences. I always prefer the jam to be sour so I can enjoy the citrus flavour.

The grandmother put a cinnamon stick before putting the lemon, to add a bit of aroma, and then she threw it.

You could give it a try because the recipe is easy. It takes 10 minutes for the preparation and 20 minutes for the whole materialisation.

It goes extremely well with hot or toasted bread. You could also use it to top cakes as long as you dilute it with some water or even better orange liqueur and warm it up slightly.

The orange marmalade can fit harmoniously with cheeses and cold cuts.

Steps

Clean carefully the peel of the oranges, we remove the orange parts while avoiding the white parts.

Cut the peels into thin cords or small dice.

We clean the oranges avoiding the white membrane that surrounds them. Cut them in the middle, remove the pits, and mash them in the blender.

We also remove the pits from the mandarins and mash them.

Put the cords of peels and the pulp of fruit in the pot.

Mix the apple in the blender and put it in the pot.

Add the water and sugar, shake the pot and put it on heat.

Once the mixture starts to warm up, mix well with a wooden spoon until the sugar melts. Let it boil until it thickens, while stirring gradually.

As soon as it starts blistering all over the surface, we test the mixture. Put a tablespoon of jam on a plate, let it cool and use the edge of a spoon on it. If the imprint remains open, then the jam is ready. Otherwise we should keep boiling the mixture.

Add the lemon juice, boil for another minute and remove from the fire. Don’t overboil it  because it might become rough.

We store it in sterilised jars, We close them up and turn them upside down until they cool completely .
