Ingredients

160 gr. all-purpose flour sifted
180 gr. granulated sugar
1 sachet of baking powder
50 gr. Fine semolina
220 gr. strained yogurt
2 large fresh eggs
3 vanillas
zest of 3 fresh oranges
1 shot of cognac
a pinch of salt

500 gr. sugar
450 ml water
1 shot of cognac

Orange yogurt pie

Very easy and fragrant

In the islands in the summer it is common to serve yogurt pie which is very fragrant. Sometimes they put almonds in, sometimes just orange juice. It is one of the treats of the Cyclades. Usually Efi makes it and shares it with all her friends and neighbours. Usually there are three baking sheets.

This brings back nostalgic memories to me, from the summers in Nafplio, my mom always made sweets or pies or some nice food that takes a little effort and offered it to the neighbours and they did the same so there was an informal cooking and pastry making competition… Criticism prevailed as well as laughter. So they said the best cheese pies are by Lela, Marianthi’s flogeres (sweets shaped like flutes) and Efi’s yogurt pie I add……

Orange yogurt pie

In the mixer, we beat the eggs with the sugar until fluffy. We must not forget that the mixer bucket must be completely dry and clean.

We add the yogurt, semolina and salt.

We stir lightly and add the orange zest, cognac and mix well until the ingredients are homogeneous.

In a bowl, we mix the flour, baking powder and vanilla.

We put them in the bucket of the mixer and mix well.

We butter the baking sheets and sprinkle them with a little semolina.

We pour the dough into the 25x25 cm baking sheet and flatten the surface with the rubber spatula.

We have to fill 1/3 of the cake pan or the baking sheet because it will swell.

We bake in a preheated oven at 180° C for 40 minutes.

We should not open the oven while it is baking because the yogurt pie will deflate.

AT THE SAME TIME WE PREPARE THE SYRUP.

In a saucepan we put 500 gr. sugar or less depending on our tastes and 450 ml of water. We boil until the syrup sets. At the last moment, we add 1 shot of cognac.

about 1 hour

We let it to cool and as soon as we take the yogurt pie out of the oven, we pour the syrup over it.
We leave for about 1 hour and after it cools down, cut it into pieces.
