Ingredients

1 cup Orzo medium or large
2 glasses hot water
1 dry onion chopped
2 cloves garlic grated
2 bay leaves
a few tomatoes chopped
1 ripe Tomato grated
10 allspice grains
olive oil
Sea salt
Freshly ground pepper
For decoration
Kefalograviera cheese

The secrets for cooking a delicious “youvetsi”  even without meat

The orzo or risotto with orzo has a strong impact on everyone and everyone likes it a lot. There are many secrets as regards the ways of cooking it.

However we entrust to you our cooking method, in order to cook it fine and not have a muddy result.

Of course you may always follow the same cooking method to cook orzo with beef, lamb or chicken.

Orzo baked in the clay pot

Put a pot on heat and pour the olive oil and the onion.
Saute until the onion is soft and add a finely chopped garlic, then stir for 1 minute.

Add the orzo in the pot for 1-2 more minutes.
Thus the orzo won't get muddy and will be very tasty.

Add the bay leaves, the cherry tomatoes, the allspice, the tomato, two glasses of hot water, salt and freshly ground pepper.

Keep stirring it.

Let it boil and pour it into the clay pot.

Bake in a well preheated oven at 180°C for about 30 minutes.

Remove the lid and cook for another 5 minutes.

Remove it from the oven and let it rest for 15 minutes at room temperature.

Sprinkle with grated Kefalograviera cheese and serve in clay.
