Everyone loves pennes as well as chicken. We added three elements beneficial for the organism: mushrooms, saffron and turmeric from Kozani, otherwise called yellowish or golden roots. A yellow shimmering powder.

It comes from a sacred plant of India and has been an important ingredient in medicine for a long time. It’s the food that cleanses the body and helps in treating problems of the digestive tract, the liver, arthritis and inflammation in general. It’s something like natural cortisone.

But we shouldn’t confuse it with curry, because curcuma just makes up 20-35% of the curry composition and gives the colour because the rest of it is coriander, cumin, cardamom and many peppers.

The cream could be absent but people like it… Personally, I do not use it in this recipe and I like it a lot.

In a saucepan with enough salted water boil the pennes according to the time indication of the package.

Pass the mushrooms with a dipped cloth or brush and slicing them without washing them with water.

At the same time, cut the chicken into small squares or rectangles and sauté them in a large saucepan with olive oil.

Once golden, turn them with the tweezers on both sides. Add the mushrooms and shake as soon as they start to get the colour we "glaze" with the wine.
