Ingredients

8 big crawfish fresh or frozen
500 gr. linguine
3 rip tomatoes cut with the blender
2 cloves garlic mushed
olive oil fine
Sea salt
Freshly grated peppers
1 shot Ouzo or one glass of asirtiko wine
For the finish
Parsley chopped
Tomato diced

Fasting and tasty

 

 

At the house of my friend at Hydra with a view to the absolute blue we prepared pasta with crawfish that karavidomakaronada_ydra_4made us go crazy. An authentic recipe that you can make it fast and easy without difficulty.

Hydra is famous for her magnificent light that touched artists from all over the world and made them permanent residents of the island. The architecture is unique and of course all the routes of the island are passed with horses or donkeys or boats. At Easter they follow the social custom and traditions and its a magnificent destination  to get away from whatever makes you anxious.

Pasta with crawfish of Hydra

Done

We wash the crayfish and keep them whole because they have more taste.

If we want we clean some of them and keep some others for decor. Always clean and toss the gut that is located at the back of the crawfish.

In a pot we saute the garlic in olive oil and in 2 min. add the crawfish so they get aroma and tastes.

We deglaze with ouzo and let the alcohol evaporate.

We add tomatoes and let them for 8 min. after they boil and turn them with a grabber.

We remove the crawfish in a platter and let them aside.

In a pot we boil the linguine in salted water with a tea spoon of olive oil and when they get boiled al dente, we drain the water and keep a cup of the water that they boiled.

We place the linguine in the tomato sauce, let them boil and stir with a grabber so the sauce gets everywhere. If it's needed we add a little of the broth that we boiled the linguine.

At last we add the crawfish. We stir with the grabber and sprinkle fresh peppers.

We serve in a platter placing on top of the linguine the crawfish and sprinkle fine chopped parsley. All around we sprinkle diced tomato.
