Ingredients

500 gr. flour for all uses
3/4 of the tea cup olive oil fine
1 shot vinegar red wine
a little Sea salt
"as much as it needs" lukewarm water
For the stuffing
400 gr. Feta cheese
2 kg spinach finely chopped
500 gr. leek finely chopped
2 bunches hartwort finely chopped
2 bunches sorrel finely chopped
4 fresh onions
1 bunch fennel
3 eggs
1 tbsp Coarse semolina
a bit olive oil
Freshly ground pepper

An original recipe from Roumeli

 

At the mountain area of Roumeli I’ve met my friend’s mother who owns the beautiful restaurant “To archontiko tis Persefonis” (Persephone’s Mansion).xortopita_xiropiito_filo_1

I admired the way she made the fyllo (thin dough for pies) with ease and outstanding grace….The stuffing is full of aromatic herbs of the mountain. Furthermore, Persephone either uses her own cheese or sometimes feta cheese  or even grated kefalograviera cheese.

Additionally she told me that she likes to place rectangle pieces of kefalograviera cheese in the stuffing “so that you feel it better….”.

The day that we visited her with her daughter she made cheese by milk from her own small goats…. A precious and original taste.

For the dough

In a bowl we add the shifted flour and we make a hole in the centre and we add, salt olive oil and vinegar.

While we stir we add lukewarm water, until it becomes a soft dough that doesn't stick in our hands.

For the stuffing

In a wide and deep pot we add olive oil, fresh onions, leeks, fennel, hartwort,, chervil, sorrel, spinach, a little pepper and saute them for a bit.

We take it off the heat and close the stove. We let the stuffing aside to cool down slightly.

We brush a pan with olive oil. We take half of the dough and we make the base fyllo for the pan so that it covers the side parts of the pan. We brush it with olive oil and lay it down to the pan.

We add feta cheese, eggs, semolina in the stuffing and mix it all together, then lay half of the stuffing on the base fyllo.

We shape the rest of the dough into 2 fyllos . With the first fyllo we top the stuffing and add the rest of the stuffing. Finally we lay the second fyllo on the stuffing and complete our pie.

We brush it on top with olive oil, cut it and bake it in a well preheated oven at 180°C for approximately 90 min.

We let it cool down. We never cover the pie so that the dough (fyllo) stays crispy.

We cut in pieces and serve it. The pie can be eaten the next day and maybe its even tastier.
