Now in summer but also in winter a favorite delicious creation is the pork with beer and honey. There are many secrets to make it well-baked with a crispy slice.

At the restaurant Zygos in Galaxidi we enjoyed perhaps the best knuckle overlooking the sea and drinking Atalanti beer. Of course the restaurant is famous for its seafood and rich salads.

We put the knuckles in a bowl and we sprinkle them with coarse salt and we fill it with beer and water and we leave them overnight, turning them once or twice.

In the morning we rinse them, we wipe them with a towel and we leave them aside.

We put the honey, mustard, olive oil, salt, pepper and lemon zest in a bowl and we mix well. We brush the mustard mixture on all the knuckles.

We place rosemary sprigs in the roaster or pan and we place the knuckles side by side and upright.

We add the bay leaves, garlic, half a beer and the peel of half a lemon.

We cover the pan with baking paper and aluminum foil and we bake in a preheated oven at 190 ° C.
