Ingredients

1 kg of Pork from neck or shoulder without bones
1 tbsp. Dijon mustard with mustard seeds
1 glass of beer
2 dried onions chopped
1 clove of garlic melted
1 tbsp. fresh butter
Half a liter of vegetable broth
salt
Freshly ground pepper
olive oil
FOR RICE
250 gr. basmati rice
1 dried onion chopped
olive oil
750 ml vegetable broth hot

We cut the pork into small pieces, season with salt and pepper, we spread it with the mustard and we put it in a bowl that we cover with a transparent film. We leave it in the fridge for 1 hour to marinate.

We put a little olive oil and butter in a saucepan and we sauté the marinated meat over medium to high heat until golden brown. We turn it on both sides with the tweezers

We add the onion and garlic and as soon as they are lightly sautéed, we"extinguish" with the beer.

We let it boil for two minutes until the beer has almost evaporated.

We add a little of the vegetable broth until the meat is covered and continue cooking until it is finally left with a little broth.

FOR RICE

We saute a chopped onion in a saucepan.
Once it withers and softens, we add the rice and we stir.

15-20 minutes

We add the vegetable broth and we stir. The ratio is 1 cup rice 3 cups broth.
We boil for 15-20 minutes.

We remove from the heat and if we want,we put it in molds and serve next to the meat.
We pour the sauce over it and we sprinkle with pepper.

We remove from the heat and we let it stand for a while and we serve with basmati rice.
