Pork with prunes

Ingredients

1,5 kg Pork
2 big dry onion finely chopped
4 cloves garlic finely chopped
5 carrots
10 prunes dry
FOR THE MARINADE
Thyme
rosemary
1 orange
a bit vinegar
2 glasses white wine
a pinch Cinnamon powder
FOR THE SAUCE
Tomato fresh, grated
1 tbspn tomato paste
1 tspn honey
Sea salt
Freshly ground pepper

In Galaxidi known as the Land of the Captains, I tasted the best pork with prunes  in the traditional tavern of Bembeli, which has been famous for years … In the autumnal ramble in Galaxidi I met my beloved friends and I stayed in the dreamy hostel Ganimedes which is famous for its breakfast, made by Chrysanthi … I had a nice rest which I really needed after the writing of my book … we won’t reveal no more.

Let’s hurry to the the kitchen with an autumn aroma.

Cut the pork in large pieces. Put it in a bowl along with all the ingredients of the marinade and leave it all night.

In a saucepan, we heat the olive oil and sauté the meat by turning it with a tweezer on both sides in order to shield it.

In a frying pan, we sauté the onion, garlic, and after they change colour we add them into the saucepan and deglaze with wine.

Let the alcohol evaporate and then add the marinade. We let it simmer for 30 minutes with the pot covered. If necessary, we could add a little hot water.

Add the mixture with the tomato, seasonings, carrot slices and prunes.

Let it simmer for 20 minutes until the sauce is tied.

We periodically stir the pot.

Remove the pot from heat and and let the fragrances arise for 10 minutes.

We finally serve. We could add some local kefalograviera cheese or feta cheese that is amazing.
