 Delicious and very easy

Euboea is famous for its pies and fried bread. I have tried countless pies with cheese, spinach, wild greens, mushrooms but Voula’s potato pie is a hit … despite its humble ingredients.

She usually prepares it for Lent, because it is fasting and she spreads the sheets with olive oil or sunflower oil. The rest of the days he uses butter. I also like to put some grated gruyere cheese in the potato pie and yesterday I added some blue cheese and it waw delicious.

We put plenty of water in a saucepan and put the peeled potatoes in.
Once they start boiling, we leave them for 20 minutes, maybe even more depending on the quality of the potato.

After they boil well, put them in a colander to drain and mash them with a fork.

In a non-stick pan, we sauté the onions, leeks, red and green peppers in sunflower oil until they wither.

We add a little hot water and let it boil for 5 minutes.
We put the mashed potato in a large bowl and fill the sauteed ingredients

We add the chopped mint, oregano, salt and freshly ground pepper.
We stir until the mixture is homogeneous.

In a pan that has been oiled or buttered, we spread one sheet and sprinkle it with olive oil or spread butter on it.

We add another sheet and pour all the potato filling on top. With a rubber spatula we flatten the surface.

We carve the pieces of potato pie.
We bake in a well preheated oven at 180° C for 25-35 minutes until the sheet gets a nice color.
We remove it from the oven, leave it to cool, cut into pieces and serve.
