500 gr. all-purpose flour sifted
1 sachet of dry yeast
80 ml olive oil

“Modified” cheese bread

Rich taste with a rustic touch

Cheese bread from Cyclades is one of the most delicious and my friend Efi makes it with great mastery.

It is served with olives and with the Greek village salad the harmony is unique. I like that sometimes she prepares it for our breakfast with fried eggs and tomatoes and I really enjoy them from her veranda overlooking the country of Mykonos.

Milk and yogurt give a special touch to bread that is very nutritious.

Now that we have more time since we stay a lot in the house, it’s the best… the most delicious and musky.

“Teased” cheese bread

In a large bowl we put the eggs, milk and yogurt and we beat with a whisk.

We add the feta cheese, which we crumble with a fork.
We add a little pepper.

In another bowl we add flour, about ¾ of the amount, yeast, olive oil, salt and sugar.
We mix them vigorously and we knead them lightly.

We add the cheese mixture and we stir.

We start kneading, gradually adding the rest of the flour and the dough is ready, when it does not stick to our hands.

We grease a baking tray and resting the dough on the base, we open it with our hand until we cover the entire surface of the baking tray.

We turn the oven to 50° C and we let the dough rise for at least 1 hour.

We remove the pan and we raise the oven temperature to 170 ° C and we let it heat well.

We smear with olive oil, using a brush the surface of the cheese bread and with the toothpick we pierce the dough, in various places.

We put the cheesecake in the preheated oven and bake for 40 minutes.

We test if the cheese bread was made, with a knife dipping it all the way in. If the cheese bread comes out clean, it is ready, otherwise we still leave it.
