Ingredients

half cabbage cut in pieces
1 cup Carolina rice
2 medium dry onions cut in pieces
1 leek chopped
1 Carrot in slices
half celery roots grinned
1 Florina pepper in slices with the seeds removed
1 zucchini in slices
1 big Tomato ripe, grinned
1 Tomato in slices with the seeds removed
1 tsp tomato paste
A little Ginger fresh, grinned
1 bunch dill chopped or fennel
Sea salt
Freshly grated peppers
1 glass olive oil fine

Fasting and easy tasty creation, tasteful and very nutritious since cabbage is rich in vitamin C and A, in calcium, helps with the detoxification of the organism, with the functionality of the brain and “gives away” shinny skin. Also it has anti inflammatory effect and anti cancer characteristics.

Fresh cabbage has shinny color and always we remove the two layers of outside leaves before we use it. The rest, after we cut it in half and then in pieces we wash it with enough water and pour also vinegar. We let it sit for a while in a basin with water and vinegar and use it as we want for salads, or at cabbage rolls but also for rice with cabbage that has lovely taste.

 

Spring rice with cabbage

We clean the cabbage from the outside leaves.

We wash it carefully and cut the stem with a knife.

We cut the cabbage in half and wash it with running water carefully. We pour vinegar over it and cut it in slices.

In a basin with water and vinegar we let pieces of the cabbage for 15 min. and after that its ready to use.

We drain the cabbage and place it in a pot with the rest of the ingredients except the dill and ginger that has to be at the end.

We turn on the stove and add, rice, olive oil, tomato, tomato paste, salt, peppers and stir.

We add warm water until it covers all the vegetables and we don't stir, but we just shake the pot.

We boil with the pot covered in medium heat for 20 min. and check with the ladle so the rice doesn't stick on the bottom.

Five minutes before the end we add dill and ginger so they give away their aroma.

We let it cool down and serve it.

Little secrets :

i) Rice with cabbage blends very well with lemon.

ii) If we don't fast, after we let the rice with cabbage cool down we can add yogurt, stir slightly and enjoy.
