Ingredients

1 kilo veal cut into pieces ,
800 g rice of 3 varieties, carolina, nuhaki, long grain
2 tomatoes ripe
2 dry onions finely chopped
olive oil
Sea salt
Freshly grated peppers
A bit butter fresh

Roasted Veal of Varasotis

A nostalgic and beloved flavor… that reminds us of some Sunday banquets at grandma’s home when we all get together…

The day before yesterday, my friend Fotini Kassaveti made a baked veal with rice for her friends and it brought back memories.

My grandmother, who was originally from Kappadokia, used to make it with chicken. So you can choose the meat you may use.

It is advisable to put the rice on the strainer and rinse it with cool water and leave it in the strainer until you use it.

You can sprinkle with a variety of peppers or your favorite cheese blend, since the bigger the variety used the more delicious the result.

Also, I recommend you always grate the cheese yourself at home before using it instead of buying it already grated.

Roasted Veal of Varasotis

In a pot, heat olive oil and sauté the onions.

When they get a golden color, we add the veal and turn it with a tongs from all sides to be roasted.

Add the tomato and warm water until the veal is covered up and then add a bit more.

We put the covered pot in low heat and boil  for about 1 hour.

In a baking pan spread the olive oil and put the juice from the veal, add the rice carolina, nuhaki and long grain and add the meat.

Continue adding the remaining rice and broth from the pot. Add some warm water if necessary. The ratio is 1 rice and 3 liquids.

Bake in a well preheated oven at 180 °C for 20 minutes, stirring occasionally.

In the middle of baking, add the butter.

If we want to roast the rice more, turn the grill on for a while.

Let it cool for a bit  and serve it sprinkled with pepper.

If we want we may sprinkle it with grated cheese which could be our favorite blend of gruyere, kefalotyri or pecorino.
