Ingredients

400 gr rice
100 gr Carolina rice
50 gr Orzo coarse
1/2 chicken
500ml chicken broth
1 cup Chickpeas
500 ml from chickpeas broth
5 medium sized dry onions peeled off
Sea salt
Freshly grated peppers
1 pinch cumin
1 ½ wine glass olive oil

On my last trip to Rhodes, I was amazed by the Rhodian pilaf made by Vangelis with rooster. Its delicious taste left some strong memories …

We give you the chicken version recipe which is easier to cook, and you can also make it with rooster or village chicken or black chicken for some extra taste.

The cumin they use enriches the flavors of the Dodecanesian cuisine.

Rhodian Pilaf with chicken and chickpeas

We soak the chickpeas in plenty of water for one night.

In the morning, we strain them and then boil them in a saucepan with enough water and at the same time we peel them off.

When they are halfboiled we may discard the water.

Put the chickpeas again in the pot with enough water and add the olive oil, the two onions whole, the salt, the pepper and the cumin.

Let them boil in a covered pot until they get soft.

Boil the chicken in water with two onions, salt and pepper for about 1 hour.

Once it's ready, we can remove the skin and bones. Then we chop an onion.

In a large saucepan, sauté the olive oil and the chopped onion until they get golden brown while stirring with a wooden spoon.

Pour the chicken broth, chickpeas broth, salt, freshly ground pepper, boiled chickpeas and the chicken and let them boil.

Immediately afterwards, we add the 2 kinds of rice, lower the heat and cover the pot. We boil for 10 more minutes and turn off the fire.

Cover the pot with a towel and let our pilaf rest for half an hour.
