2 kg Pork leg
100 gr butter
100 gr carrots cut into thick slices
100 gr celery coarsely chopped
100 gr dry onion in slices
10 apricots
10 plums
1 glass wine white or cognac
300 ml broth beef
1 tblsp corn flour
Sea salt
Freshly ground pepper
For the Rice with turmeric
350 gr rice basmati
50 gr dry onion finely chopped
80 gr butter
50 gr turmeric
Sea salt
1050 gr chicken broth
Kefalograviera cheese grated

Two recipes with flavor and exotic aroma

Double taste for today filled with festival aroma. Because, each day must be a day of celebration for the family. By cooking we show our love for our family and our friends only then the food will have a great taste.

I always liked to prepare for my friends rolled pork or chicken with apricots and plums. I always accompanied them with fried potatoes bathed with aromatic sauce.

Using various complicated recipes spend me much time. Spyros prepared me a delicious roll of dried apricots and plums, and because I like the exotic flavors I also put pink peppers grains with almonds in the sauce.

Today Spyros has prepared rice with turmeric so aromatic and very nutritious, of great nutritional value and accompanied the roll. But since the potatoes are sin … beloved by the children I made an exception this time…

You can prepare the roll according to your preferences, use only apricots or only prunes or even pineapple dried and in the winter chestnut and plum. You can “glaze” the pork with sweet wine or maurodafni but the color will become darker. In the sauce you can add pine nuts, almonds or whatever you like.

Correspondingly, you can replace pork with chicken or beef; it will simply vary the baking time depending on the meat.

Roll Pork stuffed with apricots and plums

Cut and open the pork as a long slice along.

Salt and pepper internally inside the pork and fill with plums and apricots.

Roll the pork into a round shape and tie it with a string.

In a large saucepan, let the butter melt and add the meat.

Saute it by turning it around with a tweezer until it gets a brown color from all sides.

Add the carrot, the celery and the onion and saute them until they wither.

Glaze with wine or cognac and allow evaporating the alcohol.

Transfer the meat and the sauce to a casserole.
Add the beef broth and 1 glass of hot water.

Put the casserole covered in a well-preheated oven at 200°C for 90 minutes. From time to time turn the meat.

After cooking, carefully open the casserole and take out the pork.

Let the sauce cool down a little and then put it in the blender.

Pass it through the colander to make it cleaner.

If the sauce is thin then boil it a little and thicken it by adding the corn flour.

In a saucepan, sauté onion with butter for 2 minutes.

Put the turmeric, salt and the broth and let it boil for 2-3 minutes.

Serving

Serve the pork sliced with his sauce and rice cooked with turmeric, hand-made fried potatoes sprinkled with Kefalograviera cheese and sauce.
