Ingredients

2 kilo Rooster cut into portions
1/4 cup olive oil
1 tbsp. butter of Karpenisi
3 dry onions chopped
3 cloves garlic chopped
1 cup of Mavrodaphne wine
4 tomatoes ripe, cut into pieces
2 tbsp. tomato paste
1 tsp. sugar
1 pinch clove powder
1 pinch nutmeg powder
1 pinch allspice powder
1 pinch Cinnamon powder
salt
Freshly grated peppers
FOR THE FINISHING
gruyere cheese, grated

Rooster in red wine sauce

Remove the rooster from the fridge and keep it for 30 minutes at room temperature.

In a large pot, heat the olive oil and butter in moderate heat and sauté the pieces of meat by turning them with the tongs on all sides.

Once they get a golden colour, remove them from the pot, put them on a platter and sprinkle the rooster with the spices.

We lower the fire and in the same olive oil sauté the garlic and onions for 2 minutes.

Put the pieces of rooster in the pot and when it starts boiling add the wine.

Deglaze with alcohol and add the tomato paste and sugar.

Stir the pot and add the tomatoes and some warm water until the rooster is covered.

We simmer for 1 hour and 50 minutes or a little longer because it depends on the meat.

Before we get it out of the heat, we put pepper and salt and shake the pot.
