Ingredients

1 cup water
1/2 cup olive oil
1/2 coffee cup vinegar
400 gr. all-purpose flour "as long as it takes"

1 kg sweet red Pumpkin
1 glass of walnuts grated
1 glass of flower honey or fir
1 glass of granulated sugar
100 gr. black raisins
100 gr. raisins blonde
1 tsp. cinnamon
1 tsp. cloves
2 tsp. salt
1 onion chopped
olive oil
FOR THE SYRUP
2 glasses of sugar
2 glasses of water
1 glass of honey
1 slice of orange
FOR THE FINISH
200 gr. walnuts coarsely ground

One of the most beautiful sweet pumpkin pies I tried, which here are called rovioles and I really enjoyed them in the beautiful Stemnitsa, in the mountains of Arcadia.

My friend Sofia Benopoulou makes sweets from galaktoboureko and milk pie to sweet walnut. The problem is what to choose first in her atmospheric cafe in the square. Its name is “The Senate” and has stood there since 1870… Heroic places, a poem of nature and beautiful people.

We put all the liquids for the sheet together in a bowl and after mixing them well by hand, we slowly add the flour.

We open the sheet and we cut it with the wheel cutter into small circles.

We make the filling. In a pot of boiling water, we "boil" the pumpkin for 5 minutes and we put it in the colander, pressing it.

In a wide pan, we sauté the pumpkin with a little olive oil.

We add the onion and the rest of the filling ingredients.

We mix the filling with a wooden spoon.

We close the sheet by pressing the tip with a fork and we pierce it with a toothpick to cook it better.
