Salmon cornets with shrimp and cream cheese

Ingredients

200 gr fresh (chloro) cheese or sour mizithra cheese
200 gr peeled shrimps
50 gr red salmon caviar
300 gr smoked salmon in slices
Juice and zest of 2 limes
4 sprigs dill finely chopped
10 buttons of rinsed capers
2 glasses of wine Roditi or Assyrtiko
Sea salt
Freshly ground black pepper

Prepare the stuffing whisking the cheese for 1 minute in a blender until it gets «fluffy» and «standing». Pour the juice and zest of a lime, capers, freshly ground pepper and a pinch of salt.

In a saucepan boil the shrimps with wine for two minutes to get aromas and flavor.

Drain and leave to cool. Then pour them in the filling, stirring gently with a spatula to integrate with the cheese mixture.

Finally add the dill.

Pour the filling into a pastry bag with a nozzle that gives shape.

Roll the salmon slices, like cones and fill them.

Decorate with red caviar and refrigerate, covered, for 1 hour and serve in a shell or platter.
