Ingredients

1200 gr pork cub cut into cubes
15 onions for soup cut in half
2 cloves Garlic chopped without the spike
1/2 cup extra virgin olive oil
1 glass of sweet Samos wine
4 tbsp. balsamic vinegar or apple vinegar
2 tbsp. Thyme or flower honey
1 ml orange jam
1 ml soft mustard
1 ml Sage chopped
1 ml Sea salt
variety of freshly cut peppers

Dream flavor … of a winter night …

Easy and tasty creation that will “uplift” you as a cook among your family and friends.

I tried it for the first time in Pelion, in Tsagarada and I fell in love. A friend replaced Mani sausage with orange and admittedly it was a dream come true very quickly. Another idea is to replace the pork with chicken or turkey and it is understood that you can sprinkle the dish with your own aromatics,  crumbs, oregano, anise, cumin.

In a saucepan sauté the onions and garlic in olive oil for 2 minutes.

Add the honey to the onions and sauté for 5 minutes without stirring the pan and start to melt.

Pour the apple cider vinegar or balsamic and allow the onions to caramelise, absorb their liquids and overflow the aromas.

Serve them on a plate and set aside.

In the same saucepan heat the remaining olive oil and sauté the meat until it has a golden color.

Deglaze with wine and allow the alcohol to evaporate.

Add half a cup of hot water and simmer for at least 20 minutes, if necessary add a little warm water. Pour the mustard mix gently and continue cooking for another 3 minutes.

Immediately pour the orange jam and allow to boil for 1 minute, stirring slightly.

Add the caramelized onions and add the salt and peppers and cook over medium heat for 12 minutes, stirring and whisking the pan.

Finally sprinkle with sage and leave for another 2 minutes.
