Ingredients

500 gr. large peeled shrimps
300 gr. beans
1 tbsp. Coarse salt
2 tbsp. Kalamata Olives
2 ripe tomatoes finely chopped
2 dried onions finely chopped
2 cloves of garlic finely chopped
2-3 bay leaves
1 cup of coffee white wine
olive oil
salt
Freshly ground pepper

Beautiful taste…

Shrimp on their own is a favorite flavor. A not so common combination is beans with tomato sauce. A very tasty dish that is very common in Sicily and Naples and in fact they put so much garlic that it brings you tears…

We put only 2 cloves of garlic, they usually have 5-6 cloves.

 

The secret of the Italians for the beans is the coarse salt that they put in the water to inflate them and after we boil and sauté them we add white wine, which enhances the taste.

From the previous night, we soak the beans in enough water in which we have dissolved a spoonful of salt.

About 5 minutes

We put the beans in a pot of boiling water and we cook for about 5 minutes. We pour the first water and we boil again on low heat, until they boil well but do not dissolve.

During boiling, we add hot water, if necessary.

Once the beans are boiled, we remove them from the heat.

In another pot, we sauté the onions and garlic in olive oil and when they wither, we add the wine.

We add the tomato, bring to a boil and we add the beans, shrimp, bay leaves, salt and pepper.

10 - 15 minutes

We let them boil for 10-15 minutes on low heat, until their liquids run out.

Finally, we add the olives, 2 minutes before turning off the heat.

We sprinkle with chopped parsley and we serve.
