Ingredients

20 large shrimps
180 gr. kadayifi filo (angel hair pastry)
1 teaspoon sweet paprika
50 gr. almond slices
paprika
salt
Freshly ground pepper
80 gr melted butter or fine olive oil
For the sauce
3 pineapple slices
40 gr. honey
50 gr. ketchup
Juice of 2 oranges
Juice of 1 lime
1 chili pepper finely chopped

Shrimps wrapped in kadayifi filo and a sweet–sour sauce, crunchy dream taste, simply delicious. Playing, you dip the shrimps in the sauce and every bite is a «lifting» point. The nicest fasting recipe I tried. It was thrilling, so I share it with you.

Steps

Peel the shrimps leaving only the tail. With a sharp knife remove the small intestine from the back of the shrimp, if of course there is. Then wash and salt and pepper lightly.

With our hands we open the kadayifi filo, separating the fibers to become «fluffy».

Cut the filo into kadayifi tufts and spread to form elongated strips, sprinkled with a little paprika and almonds.

At one end we put the shrimp, then wrap in a roll and brush with melted butter or olive oil.

Place the shrimps in a baking pan that we have brushed with olive oil or butter and bake in a well preheated oven at 180 °C for 15 minutes.

We prepare the sauce.

In a deep nonstick skillet that we brushed with olive oil sauté the pineapple, the pepper and we turn with forceps until browned.

Pour the honey, ketchup and add the orange juice and lime.

Allow the sauce to glaze for a few minutes and serve in small sauce bowl next to the shrimp.

Small secrets

We can serve the shrimps with basmati rice that is aromatic and so we will have a full meal.

The green salad with tomatoes is a perfect combination.

If not fasting, we can replace the olive oil with milk butter to get more glossy color on the filo.

Serve the sauce separately to leave the filo crunchy and «playing» we dip the shrimps in the sauce.

Keep the recipe for the sweet – sour sauce because it blends in also with chicken and pork.
