Ingredients

1 kg veal from the haunch
2 dry onions medium, cut
2 cloves garlic
1 glass red wine Agiorgitiko or Xinomauro
5 tomatoes ripe, grinned
1 tsp tomato paste
5 carrots cut in slices
1.5 tsp spearmint chopped
half a bunch dill chopped
1 tbsp Fresh oregano or dried
500 gr. peas fresh or frozen
Sea salt
olive oil fine
1 tsp sugar
Freshly ground pepper

My friend, Eva is a very great cook, maybe it is because cooking relaxes her and she enjoys it… so the result is the best. Cooking needs love, patience… needs time. Confectionery is also a key strength of hers. Every time that I visit Chania she doesn’t stop to amaze me with her cooking skills. She is imaginative and knows how to blend harmonically the aromatic herbs with the vegetables and meat.

Veal is always tasty and delicious a fact thatmaybe  has to do with the quality of the ingredients. The vegetables are from the neighbors garden, but it is an extreme luck that the butcher is her patient too…so he takes care of her.

The table is ritually set and I truly enjoy every moment with her.

I requested her recipe for the veal and I share it with you.

 

Slow cooked veal with peas

Steps

Done

In a big pot we saute in olive oil onion and garlic for a while.

We add the meat and sear it on high temperature and turn it with a ladle so it doesn't lose its juices.

When it gets a redish color on all its sides we "deglaze" with wine.

We let the alcohol evaporate and add tomatoes, tomato paste and sugar.

90 min.

After a while we pour in 1 cup of hot water, we stir slightly and slowly boil for 90 min. in a pot with the lid on.

If its needed we add a little hot water. When the meat becomes tender we add peas, dill, carrots and shake the pot.

30 - 40 min.

We let it boil for 30-40 min.

5 min.

The last 5 min. we add spearmint, oregano, salt and freshly ground pepper.

We shake the pot and remove it from the heat.

Little secrets :

If we want we add potatoes and a little grinned ginger that blends well with it.
