Ingredients

For the filling
2 chicken fillets
2 red peppers finely chopped
2 green peppers finely chopped
2 yellow peppers finely chopped
1 small tin sliced mushrooms
1 large dry onion finely chopped
bay leaf
250 gr. louza or bacon chopped
1 packet béchamel sauce
500 ml of milk
250 gr. Kalymnos cheese and graviera cheese grated
A pinch of nutmeg
For the sheet (filo)
500 gr. farina , self raising flour
250 gr. vegetable fat
1 yogurt strained

Small chicken pies with peppers

Each bite is a poem that sends you on a tasty voyage. The bad thing is that I cannot stop. Especially when we «tie» this with sea wine as I call it, Assyrtiko and good company. Then happiness is overflowing.

Steps

In a bowl put the yogurt, vegetable fat and farina self raising flour.

Mix well until the ingredients become homogeneous and make a pliable dough.

Cover the bowl with transparent food film and leave the dough in a warm place to «rest» for 30 minutes.

Cut small balls and roll out with a rolling pin small sheets.

In a pot with salted water and bay leaves cook the chicken for 30 minutes.

Strain and let cool.

Grate the chicken with your hand until it is as fine as fibers.

In a sauté pan with olive oil, put the peppers, onion, mushrooms and louza.

At the end add the grated chicken.

Mix gently and allow to boil for 5 minutes until all the flavors emerge.

In a bowl pour the powder of the béchamel sauce and add the milk. Whisk until thickened for 1 minute and finally add the nutmeg.

Add the béchamel sauce to the remaining ingredients and mix gently.

In each sheet put 1 tablespoon filling and close like a triangle or crescent moon.

Bake in a greased baking pan in a well preheated oven at 180 °C for 25-30 minutes.

We can replace the louza with smoked bacon or pork ham and local graviera cheese or with traditional arseniko Naxos cheese.
