Ingredients

500 gr. self raising flour
250 gr. butter cold, cut in cubes
250 gr. strained yogurt
1 egg fresh
1 tsp salt
1 tbsp Ouzo
For the stuffing
500 gr. spinach chopped
1/2 bunch hartwort
300 gr. ksinotiri cheese or feta cheese crubs
3 eggs
50 ml olive oil
1 shot Ouzo
1 pinch nutmeg
Sea salt
Freshly grated peppers
For the finishing
a little Milk
1 egg yolk

Small pies with kourou dough stuffed with cheese and greens

 

My favorites

My friends always asks me to make them small pies stuffed with cheese and greens and if i am in good mood i don’t break down a favor. They are so delicious and aromatic because they have spinach, leek, fennel, hartwort, fresh onions and if we find more aromatic plants its even better. The soft feta cheese or the ksinotiri cheese or the ksigalo cheese or even kefalograviera cheese are a perfect match with the greens and the tasty dough.

Small pies with kourou dough stuffed with cheese and greens

Steps

We sieve the flour so it gets air inside and we put it in a big bowl. We sprinkle salt, butter and stir well.

We add yogurt, egg, ouzo, salt and knead them strongly turning the dough from bottom to top until we have an easily kneaded dough without being soft or hard.

We cut it in small balls and wrap them with plastic membrane. We let it rest in the fridge for an hour

In a big bowl we prepare the stuffing, we add spinach, leek, onions, fennel, hartwort, ksinotiri cheese or feta cheese that we crushed it with a fork. We add eggs that we whisked it lightly with nutmeg.

We mix them well and at last we add ouzo and 1 min. later olive oil.

With a cup or with a saucer we cut the dough sheet (filo) in round pieces. In every piece we add 1 tbsp of the stuffing and right in the middle. We close the small pie by pressing the edges all around with our fingers so the dough can't get out.

We lay cooking paper in a pan and place the small pies with distance between them.

In a bowl we whisk the egg with milk and brush the pies with it.

25-30 min.

We bake in well preheated oven at 180 °C for 25-30 min.

We take them out of the oven and let them cool down without covering them so they stay crunchy.
