Minced meat dumplings with cheese

Ingredients

500 gr. self raising flour
200 gr. strained yogurt
220 gr. seed oil
110 gr. margarine (vitam)
1 tsp baking powder
2 pinches salt
For the stuffing
500 gr. minced beef meat cut 3 times
salt
Freshly ground pepper
1 pinch cinnamon
100 gr. kefalotiri cheese grinned
100 gr. mozzarella grinned
1/2 dry onion chopped
For brushing
2 egg yolks

Iakovina is excited with our minced meat dumplings with cheese

I go crazy when with my friend Nana we reproduce tasty creations of the traditional Greek cuisine and many times its even better from those that are made by moms and grandmothers that i tasted.

So it happened with Iakovina, mother of my friend Dimitris, that i went mad with her small pies with minced meat and cheese although i didn’t had the recipe we made them even better….

If I imagine that she won’t make them again for me then I will have to visit Nana at Servia…. I don’t think so…. anyways we had so much fun.

 

Minced meat dumplings with cheese

In a bowl we add baking powder, salt and mix them.

We add butter and the rest of the ingredients and knead them very well until we have a smooth, soft and oily dough.

We cover it with membrane and let it "rest" for 30 min.

We prepare the stuffing.

In an anti-stick pan we add butter, onion and the minced meat and saute them without stiring. When the minced meat is incorporated in the base then we stir, add salt, pepper and sprinkle cinnamon.

We take it off the heat and add the cheeses and stir very well.

Afterwards we cut the dough in small pieces and cut them with the rolling pin in sheets (filo). In the center we add a spoon of the stuffing and roll them.

In a pan we lay down a sheet of cooking paper and place our small pies. We brush them on their surface with egg yolk.

We bake in a well preheated oven at 180°C for 30 min.

We let them cool down without covering them and then we may serve.
