Ingredients

Phase A
2 lt Tsipouro or Raki of excellent quality
Peels from 1kg de-waxed oranges
2 Apples cut in half
4 cinnamon sticks
5-6 cloves
Phase B
1/2 kg fir honey
3 lt raki or tsipouro
Phase C
Cinnamon stick cut into small pieces

 Smoked Rakomelo of the Mountains

It first appeared in Crete and was the “warm up” for the mountain people. They mixed the raki, that although it is the same spirit it is either called tsipouro or raki, with honey that was plenty and was of excellent quality.

Within they put cinnamon, a little dried orange peel and “boiled” it. I will never forget my trip to Crete, snow all around and the grandfather of my friend who “persuaded” me to try … Because I was a guest of the family, according to the tradition he “smoked” the glass with cinnamon. A culinary experience which “wrote” to the palate and in my memory. Try it hot and you will remember me … “Only those who don’t know drink cold rakomelo” the Cretans said and laughed … We use our own raki and wonderful flower honey … with good company, the fireplace lit … and praise God!rakomelo_dhmhtsanas_2

Place the materials of the first phase in a glass jar for 40 days.

Keep it in a cool, well ventilated place.

Remove the peel and pass the raki through a cheesecloth

Pour the liquid into a large saucepan with the honey and the remaining raki.

Boil at low temperature for a while stirring gently to dissolve the honey and for the mixture to become homogenous.

Allow to cool.

We take a small piece of cinnamon and we lit it.. Once it starts to smoke we close it inside inverting every glass that we will serve the rakomelo with. So it gets an unlikely smoky flavor that is imprinted ...

Heat the rakomelo and serve ....
