Ingredients

1 kg minced mix meat (beef and lamb), minced twice
2 medium sized onions grated
2 eggs fresh
1 tsp pepper red sweet
1 tsp allspice
1 tsp cumin powder
1/2 tsp οregano
1 tsp black pepper
2 tblsp vinegar
2 slices bread stale
ingredients for the Tsimeni paste
500 gr fenugreek grounded
200 gr garlic smashed
230 gr pepper red hot
60 gr black pepper
1 tsp Sea salt
45 gr cumin powder
70 ml olive oil optionally

Soutzoukakia from Kaisaria

and  Tsimeni paste

Soutzoukakia is a Greek and Turkish dish of spicy oblong köfte (egg-shaped meatballs) with cumin, cinnamon, and garlic served in tomato sauce.

Tsimeni is a spicy paste of garlic and paprika which is a good match for meats.

FOR THE MEAT PATTIES

Put the bread in a bowl and soak it with water.

5 minutes

After 5 minutes, press the bread with your hands to strain.

In a bowl put all the ingredients and knead with your hands vigorously.

The secret of success lays in the way we knead, since we have to put our finger in the middle of the dough in order to get some air in it.

Allow the dough of the patties to «rest» during the night to emerge the aromas.

In a deep pan fry the patties in hot oil turning with forceps from both sides.

On a platter put absorbent paper and place the patties to drain the excess oil.

Serve the patties with French fries or rice.

FOR THE TSIMENI

Soak the fenugreek in water.

Mix all ingredients to a solid smooth cream.

Seal it airtight in a bowl and store it in the fridge, thus you can use anytime.
