Ingredients

1 kg of spinach fresh, cleaned and coarsely chopped
1 cup glazed rice
2 dry onions chopped
6 spring onions with their leaves, finely chopped
Half a bunch of dill chopped
1 leek chopped
1 Carrot Grated
1 tbsp. tomato paste
1 tsp. sugar
Lemon Juice from a juicy fresh lemon
Half a cup of olive oil fine
Sea salt
freshly ground peppers

Spinach is one of the traditional Greek flavors that really makes us stronger in the winter, with the cold and viruses.

 

Spinach is a vitamin bomb for our body.

The complex of B vitamins activates our immune system and shields our body from colds.

Spinach helps memory and brain function.

We must “adopt” it in our diet, since a cup of raw or lightly cooked spinach exceeds the body’s daily needs for vitamins A and K. Spinach also contains vitamin C and is a rich source of iron, magnesium and manganese.

The secret to enhancing the absorption of iron from spinach is to accompany it with lemon, tomato, pepper and foods rich in vitamin C.

Remember we never accompany spinach with dairy because they “do not facilitate” the absorption of iron.

You can accompany the spinach with salted meats, trout, herring, sardines.

Little secrets that the cook shares:

The spinach rice wants to boil over a low heat and the mixing is done only with a wooden spoon.

We can also add tomato, 1 tbsp. tomato paste

1 tsp. sugar.

We wash the spinach and all the aromatic herbs well.

In a large saucepan we pour the olive oil and we add the dried onions and fresh, leeks and we sauté for 3 minutes, stirring with a wooden spoon.

We add the spinach and carrot and we let them sauté for 3 minutes on high heat and we stir again.

Once the spinach is withered, we add the rice and we stir it so that it goes everywhere.

We add 1 glass of boiling water and we season with salt and pepper. We let simmer for 12 minutes.

We add the dill and we continue cooking for another 3 minutes.

We add the lemon juice and we stir.
If we want, we add olive oil.

We remove the pot from the heat and we cover it with a towel in order for the liquids to be absorbed and the aromas to emerge.
