Ingredients

1.200 gr. fresh mussels with the shell
2 dry onions chopped in rings
2 tomatoes cut into rings
2 green peppers chopped in rings
1 whole clove garlic
100 ml. white wine Asirtiko or Malagouzia
1 pinch οregano
5 tbsp. olive oil
Half a bunch of Parsley
For the finishing
Smoked paprika

Summer fish delicacies that I enjoyed in one of my gastronomic escapes with my friend Eleni Antoniadou on my recent trip to Thessaloniki. She took me to her favorite places, but next time I will take her to my own favorite place in Thessaloniki, which is Agioli, to enjoy the tasty creations in the sunset of Thermaikos.

However, I loved the mussels like all the other fish delicacies of the well known fish tavern in Nea Krini of Thessaloniki.

Steps

Put all the mussels in a colander and let the water run continuously.

With a brush we clean them one by one and pull their whiskers.

The shell must be clean.

Put the mussels in a bowl.

In a deep saucepan, put tomatoes, peppers and onion rings to be lightly sautéed with olive oil and "deglaze" with wine.

Raise the fire and pour the mussels, chopped parsley and grated pepper.

Cover the pot and let the mussels "steamy" for 5 minutes without adding water because they have their own.

Once the mussels are opened, put them on a platter and pour them with their broth.

Sprinkle the platter with smoked paprika and if you want in the center of the dish, sprinkle with wild herbs for extra scent.

Beware to throw away any mussels that do not open during the steaming process.
