Ingredients

5 medium tight tomatoes
5 peppers large
500 g minced beef meat lapa
2 tsp sugar chopped
1 cup olive oil
1 onion large, finely chopped
Half a cup of tea Carolina rice
1 bunch of parsley small, chopped
2 Garlic cloves chopped
Half a cup of chopped fresh mint
2 tomatoes ripe large, grated
1 ½ cup tomato juice
salt
Freshly ground pepper
FOR THE SAUCE
2 cups tomato juice
1 cup olive oil
1 tsp sugar
1/2 tsp pepper
1/2 tsp salt

Stuffed peppers with minced meat
Authentic taste of Greece

Α favorite food of mine that we definitely don’t enjoy it only in the summer… So delicious, unique that floods Greece, memories, happy banquets and family gatherings. With feta cheese and a nice Moschofilero wine of Mantineia, it is a poem.

The stuffed peppers are made with minced meat or only with rice and aromatics that our grandmothers called “orphans”.

Mrs. Voula, the mother of Chrysoula, my dear friend from the Ganimede Hotel in Galaxidi, always makes us stuffed peppers that disappear “in the blink of an eye”…

 

I have to admit that Chrysoula improved her mother’s recipe taste even more and the stuffed peppers are dreamy.

Now, how we managed with Chrysoula to get a plate of stuffed peppers as soon as they came out of the oven and to photograph them in the port of Galaxidi… that’s another story…

Wash the peppers and tomatoes.

Cut the tomatoes from the top and with a spoon remove the inside, the thinner they are, the more successful our food will be.

Open the peppers and remove the seeds.

Put all the sauce ingredients in a bowl and mix.

In a large frying pan, sauté the cup of olive oil, onion, garlic, herbs, salt, pepper, rice and grated tomatoes.

Add half a cup of hot water and boil them all together for 10 minutes.

Then mix them with the minced meat and tomato sauce and start filling the peppers and tomatoes.

Put the lids on and pour over the vegetables with the sauce we have already prepared.

1 hour and 15 minutes

Pour a little toast on top of each stuffed pepper.
Bake in a preheated oven and bake in a medium oven at 170 - 180o C for 1 hour and 15 minutes.

Shake the pans a little so that the sauce goes everywhere.
Remove it from the oven and let it "stand" for a while and serve it.
