Island recipe of fishermen

A very easy, delicious and extremely economical recipe. The fish must be fresh and from what they name third class. So we will make an incredible fish appetizer for our tsipouro or ouzo. The recipe was invented by fishermen who used fish they had not sold.

It is best to enjoy our snack by the sea, but if this is not possible then where there is good company.

We tear the fish, we open it in two, without cutting it.

We remove the bone, we wash it and we smear it with strong vinegar.

In a place with good ventilation and strong sun, we sunbathe the fish for a day after we have first covered it with tulle for protection from insects.
