Ingredients

10 Crust sheets
100 gr. butter melted
A little Rose water
For the stuffing
6 eggs separated into yolks and egg whites
1 cup of granulated sugar
1 tsp. baking powder
3 cups almonds with peel, coarsely cut
1 cup breadcrumbs grated
1 tsp. cinnamon
1 tsp. clove in powder
1 shot cognac or Grand Marnier
Juice and zest from half dewaxed orange
1 pinch salt
For the syrup
3 cups of sugar
2 ½ cups of water
1 tbsp. orange juice or lemon

Sweet Copenhagen – The sweet of joy

The sweet of joy, with a special flavor and aroma. It was the emblematic dessert of the urban class of the past and was dedicated to King George A. It owes its name to Denmark where it comes from.

Lately it made a major “come back” to our islands. From Crete to Santorini. I tried it from the “hands” of my friend at Fira and I was delighted … The recipe is yours.

It is also accompanied with ice cream or chocolate … for greater coolness and delight.

In the mixer bin, we put the egg yolks and the sugar and beat with the wire until they become “fluffy".

Add our liquids and mix lightly and add the almonds.

In a clean bin of the mixer, beat the egg whites until they become meringue and add it mixing gently into the stuffing.

Butter a medium baking pan and spread five crust sheets one after another after we butter them with a brush.

On the 5th sheet, empty the filling and spread it evenly on the surface.

Turnover excess of the sheets of the base on the stuffing and spread over one sheet that we also butter and continue to spread the remaining crust sheets in the same way.

With a sharp knife we cut into strips and what remains from the sheet we remove from all around.

Sprinkle the surface with rose-water.

Preheat the oven well at 200 °C.

Put the baking pan in the oven and bake our sweet at 170 °C, for 50-55 minutes until it turns evenly brown.

Prepare the syrup by boiling the water with the sugar for 5 minutes, and just before removing it off the heat add the lemon juice while stirring lightly.

Remove the pan from the oven and let it cool without covering it to keep the sheets crispy.

Pour the syrup warm and leave the fragrances to rise for about 1 hour.
