Ingredients

FOR THE SALAD
1 small cabbage chopped
1 lettuce chopped
Half a fresh finocchio (Florence fennel) chopped
2 tbsp. fresh dill chopped
1 tbsp. fresh fennel chopeed
200 gr. Danish blue cheese or Roquefort cheese
2 tomatoes cut into cubes, seedless
2 prunes chopped or dried apricots
Half a cup walnuts chopped
1 cup pomegranate seeds
200 gr. louza (steak) of Mykonos or smoked pork chopped or pieces of smoked bacon
FOR THE DRESSING
Half a cup of fine olive oil
¼ of a cup balsamic vinegar
orange juice from 3 fresh oranges
2 tsp. Thyme honey or flower honey

The salad of joy

 A superfood salad

A rich salad that overflows with vitamins and trace minerals and lifts our spirits. It is so delicious, so cool and definitely a complete meal for lunch.

A feast of flavors, colors and aromas.

Cabbage, lettuce, finocchio (Florence fennel), tomato, plums, walnuts, pomegranate, orange juice, honey, this salad has everything.

The roquefort goes well and the louza (steak) of Mykonos gives this special touch, as it matures for months. Louza or apaki  (pork tenderloin) of Crete are similar cold cuts but if it is difficult to procure them, a smoked pork or even smoked bacon or even prosciutto is a good fit.

A very successful choice that I try to make as often as I can.

This salad improves my mood and I call it “the salad of joy”. I usually enjoy it with a glass of ice cold beer, if it is fresh even better like this of Mykonos.

 

The salad of joy

Done

Before we cut the greens, we put them in the fridge to keep them cool.

We put the ingredients in order in a large salad bowl.

First the cabbage, finocchio, fennel, dill, fennel and tomatoes and we mix them well using our hand.

We add the walnuts, plums or apricots, pomegranate seeds and toss them on top of the greens.

Finally, we add the cheese in pieces and put the cold cuts around the salad bowl.

We beat all the dressing ingredients in the blender. Olive oil, balsamic vinegar, orange juice and honey.

Αs soon as the mixture is homogenized, we pour it over our salad.
If we want, we serve with croutons.
