Ingredients

4 sheets of gelatin (1,6 gr each)
200ml water bottled
200 gr. sugar
50 gr. glucose
4 drops Lemon Juice

We usually make amazing tarts with strawberries. To keep them fresh, shiny and to prevent them from melting they have their own secret. The same applies to all fruits except from kiwi and papaya that do not accept it…

We share the secret with you.

So we have make a gel coating and brush them or deep the strawberries in it.

Soak the gelatin sheets in cold water.

In a pot, put water and sugar, turn on the hot plate and mix with a wooden ladle until it boils. We add glucose while stirring, drain the gelatin leaves and add the lemon juice. Mix and let it boil for 1 minute.

We let it cool down and spread the gel on the strawberries with a brush or deep it with a ladle in it.

So the strawberries will be shiny and preserved longer.
