The amazing recipe and its sweet story

Tiramisu, the iconic dessert of Italian confectionery. It is delicious, airy with rich cream and velvety texture. The truth is that it ιs much loved and today we find it in all restaurants. In Italian the etymology of the word is “lift me up” is what we call inciting… obviously because of the energy as it combines caffeine, cheese and alcohol.

Italian tradition wants the tiramisu to have been created in the 17th century in honor of the Duke of Tuscany. Another version wants the tiramisu to appear in 19th century Turin and the mystery that envelops the genesis of the sweet wants to be offered to the beloved and dynamic politician, leader of the struggle for the unification of Italy, Camilo Cavour to give him energy.

Italian gourmet Maffioli claims that tiramisu was traditionally offered by friends to the groom to start his new life dynamically.

However, Treviso, located near Venice, claims the paternity of the sweet and they have to be adopted by Unesco as an intangible cultural heritage and certified as a PDO product. Whatever the development of the story, we like it, although it has been abused by some restaurants.

I tried the best tiramisu in Italy in Venice at Café Florian, in Rome at Café Greco and in Greece from the hands of the mother of the Italian friend Eliza and from Vangelis Albertis in Tinos and he gave us the recipe that excited me.

The cheese plays an important role since the authentic mascarpone is quite thick and delicious and Vangelis brings it from a secret source in Italy. However, Galbani mascarpone, which is the best, can be found in all supermarkets, so do not worry.

I am happy to share the recipe with you…. Your imagination will work wonders and you can give it the shape you want using forms. So it can be made like a cake, give a heart shape for a birthday or just serve it in a cup as I like… If you want an even more festive look you can use pastry bags for the cream.

We prepare the espresso coffee and we pour the 4 cups in a wide bowl and if we want, we add coffee liqueur for a more intense taste.

We dip the cookies in water until they are wet and we place them on a baking sheet.

We put the sugar and the egg yolks in a bowl and we beat hard with the whisk until they turn white.

In another bowl, we beat the mascarpone or other cheese with a wooden spoon until it becomes a smooth cream and we mix it with the yolk mixture.

We sprinkle the cookies with a little more coffee but without "losing" their shape and we spread a layer of cream cheese on top and we spread the surface with the spatula.

We sprinkle with cocoa and we create another layer of ladyfinger biscuits on top in the opposite way, ie vertically so that there are no gaps.

We pour the rest of the cream on top and spread the surface with a spatula until smooth.
