Tomato balls or else tomato pancakes

Ingredients

1 kg cherry tomatoes cut in 4 pieces
1 dry onion chopped
1 green pepper chopped
1 cup spearmint leaves
1 bunch dill chopped
half bread old
1 tbsp tomato paste
1 pinch cooking Soda
1 glass water
a little flour for all uses
Freshly ground pepper
For the frying
olive oil

A tasty creation that can be made at a moment. It belongs at the “povera” cuisine because we use simple raw materials to make it. Giannis Sirigos from Thirassia gave me this recipe but we made it and enjoyed it at my favorite area, Korasida in Evia.
 
It better to use cherry tomatoes that are more tasty if it happens to find them later, at the beginning of the summer, when they are waterless then it becomes dreamy…ntomatokeftedes_ntomatotiganites_4
 
Tomato balls can’t be kneaded when they are authentic but they become mush that we pour it with a spoon in the hot olive oil… this is the reason that are named tomato pancakes…
 
If we want we sprinkle a little feta cheese over the tomato balls.

In a bowl with water we put in the bread and let it soak for 20 min.

We tighten the bread with our hands so the all the water gets out.

In a basin we place the bread and add all the ingredients in order.

We knead strongly with our hands until it becomes a thick mush.

If its needed we add a little flour so the mixture thickens.

We cover the basin and let it rest in the fridge for at least 3 hours so the aromas will emerge.

In a deep pan we pour olive oil and when it gets hot we pour with a spoon the mush of the tomato balls and when it thickens and gets a nice red color we turn it on the other side.

In a big platter we place absorbent paper and place the tomato balls in order for the excessive oil to be absorbed.

We serve and the aromas are flooding... the table.
