Ingredients

INGREDIENTS FOR 2 TSOUREKI
650 - 700 gr. flour for tsoureki
150 gr. sugar
250 ml fresh milk
1 tsp. salt
2 eggs
2 egg yolks
3 tsp. dry yeast
zest of 2 large fresh oranges, dewaxed
2-3 vanillas
1 shot of cognac or rum
125 gr. fine cow butter
FOR THE FILLING
1 cup full of walnuts grated
4 tbsp. fine cocoa powder
6 tbsp. granulated sugar
1 Egg white
2 vanilla
1 shot of cognac or rum
FOR SPREADING
1 egg beaten
poppy seeds or sugar crystals with cinnamon

Certainly making your own tsoureki is not the easiest thing, I always preferred to buy it from stores in some hidden corners that make it the best…

But I tried Efi’s tsoureki, which she offered me along with my favorite espresso, the Nespresso variety Nicaraguan Arabica with notes of honey and cereal. The absolute harmony…

Because I am always looking for the issue of taste, I thought that I might have overestimated this tsoureki since I was in nice company in Mykonos and we were looking out of the verandas at the surrounding islands. Fascinating view that subjectively makes everything exceptional.

So I decided to make it at home, first time making a tsoureki, to see if it really is worth that much. I didn’t have any difficulty at all and the result was equal to Mykonos’ tsoureki. Fortunately, I made 2 tsoureki because one is never enough … it was eaten as a snack. I shared the second one with friends.

It is worth it… you will remember me…

We put some of the flour and yeast in the mixer bucket and some lukewarm milk and beat with a whisk on high to medium speed until it becomes a thick porridge.

Then we put the butter, sugar, spices, remaining milk and eggs in a small saucepan and mix well. Once the mixture is homogenized, we pour it into the bucket of the mixer and beat the dough slowly with the hook until the ingredients are homogenized and we have a pliable dough that comes off the walls of the bucket.

We remove all the dough from the mixer bucket and cut it into 2 pieces.

We knead it well one by one because it is a lot and then put them in a bowl, cover them and leave them in a warm place for 3 hours to swell.

WE PREPARE THE CHOCOLATE FILLING

In a dry bowl, we whisk the egg white until it becomes a meringue.

In a bowl we put all the ingredients nuts, cocoa, sugar and mix.

We add the meringue, vanilla and cognac and mix well until the mixture is homogeneous.

After the dough rises after 3 hours, I divide it on my counter in 4 parts since we intend to make 2 tsoureki, so we will make 4 strips.

With the rolling pin, we lightly open narrow strips and in the middle of each one put ¼ of the chocolate filling. We close carefully by wrapping each strip in string. We follow the same procedure for the other 3 strips.

Immediately after, for every two strings we make braids for 1 tsoureki.
We follow the same with the other two strips.

We put each tsoureki in a rectangular cake pan that we have buttered well or use baking paper.

We leave the baking pans in a hot part of the kitchen for 1 hour or more until the dough rises and doubles.

Before the tsoureki are put in the oven, we "pass" them with the brush with beaten egg. One of the tsoureki can be sprinkled with poppy seeds.

40-45 minutes

We bake in a preheated oven at 170° C for 40-45 minutes.
After 30 minutes of baking, we cover my molds with baking paper so that the surface of the tsoureki doesn't burn.
