Twistedpie of Kozani with lemon cream

Ingredients

400 gr Crust sheets
160 ml Lemon Juice
2 Lemons zest
125 gr butter fresh
180 gr sugar
6 eggs
1 dose vanilla powder
100 gr butter for the sheets abnd the tray

Amazing, fresh summer taste that leaves a velvety aftertaste.

Kozani is famous for its pies. I was so lucky that I could taste a dreamlike twistedpie at the Folklore Museum. A recipe deriving … from the beginning of the century.

Spyros Nakos gave us the dosage of the ingredients for the recipe in order to have fast and delicate results.

In a pot, put the butter, the sugar, the lemon juice, the zest, the vanilla and the eggs in low heat stirring continuously with a wooden spoon until the mixture congeals.

Remove from the heat and let our cream cool.

Once it cool, put the cream in a pastry bag.

Take a crust sheet and lay it on the counter. With the pastry bag, we draw a line with the filling from one end to the other.

Go through the sheet with butter and roll it.

Then twist the roll and shape the pie.

Repeat the same with the rest of the sheets.

With a brush, lightly smear the twistedpies with melted butter and put them in a buttered tray.

Sprinkle with lemon zest.

Let it cool for 10 minutes and serve.

Little secrets

If we want we can go through the twistedpies once cooked with neutral coating jelly and sprinkle with grated almonds or hazelnuts caramelized broken.
