Tzatziki of Chrysoula

Cool summer taste

Tzatziki is another superfood of Greek cuisine. The ultimate summer salad spread and more.

The better the quality of the yogurt, the tastier the tzatziki becomes. Cucumbers are of high nutritional value, as are olive oil, garlic and vinegar.

It is made very easily and with toasted bread it is an ideal meze for ouzo.

We wash the cucumbers that we have already cooled in the fridge and we peel them.

With the grater on the thick side, we grate them and leave them in the colander to drain well. If necessary, we press with our fingers to get rid of the excess liquids.

We peel the garlic, grate it and squeeze the juice into a blender or mortar.

We put the yogurt in a large bowl and add the cucumber, garlic, salt and after mixing, we slowly add the vinegar.

We continue pouring the olive oil and stir constantly counter clockwise.

We taste it and depending on our preferences, we add more olive oil or vinegar or even salt, stirring constantly.

We put the tzatziki in airtight bowls and then in the fridge to cool for 2-3 hours.

We serve by pouring olive oil, grated pepper on the surface and we decorate with Amfissa olives.

LITTLE SECRETS

If we do not have strained yogurt,we use whole yogurt and put it in a bowl for 2 hours before using it.
