Upside down apple pie with sheep butter
So delicious…

My friend, Gianna Balafouti, is one of the pioneering creators of Greek gastronomy. Particularly inspired, her creations are delicious. Her sweets, jams and cookies “upset” Athens. Nowadays she is occupied with teaching her art at a gastronomy school and not only… From where to start to write about our dear Gianna.

I really like her apple pie, and both butters give it a special aroma and taste. This sweet is a must for the days we are at home. So I asked her for the recipe and she fortunately managed to photograph the apple pie before it disappeared from the “face of the earth”.

The same recipe goes well with other fruits too. Pear, pineapple, apricot, peach, vanilla, cherry, strawberry, banana, kiwi, etc.

Apple is a fruit of high nutritional value for our body, it is basically a vitamin bomb. It is no coincidence that in Germany, at the entrance of most churches, there is a large bowl of apples for anyone who needs them.

Apples are extremely rich in antioxidants, flavonoids and fiber. They contain vitamins A and B-carotene, vitamin B, C, E, K. They also strengthen our immune system, which we need a lot, they help lower cholesterol and diabetes and makes us beautiful. Their vitamins help and protect the skin cells, delay the signs of aging and makes us shine.

So when you are hungry and do not have time to prepare this wonderful apple pie, eat at least one apple with a little bit of Ceylon cinnamon and give a gift to your body.

Steps

1
Done

We preheat the oven to 210°C, add the butter to the baking pan and put it in the oven to melt.

2
Done

We wash, clean and slice the apples into thin crescents.

3
Done

We melt the white granulated sugar in a baking pan until it becomes a light caramel.

4
Done

Once the butter in the baking pan has melted, we add the chopped apples, side by side, trying not to leave too many gaps. When the apple pie will turn upside down, we want it to be full of apples.

5
Done

We add the melted sugar on top of the apples. If we have nuts, we add them.

6
Done

In a bowl and with a hand mixer, we beat the sugar, eggs and vanilla on high speed until the mixture is "fluffy" and almost white.

7
Done

We pour the baking powder into the flour and immediately afterwards into the egg mixture.

8
Done

Once homogenized, we pour the mixture into the baking pan with the apples and caramel. We spread it with the help of a spatula so that the whole surface is covered.

9
Done
45 minutes

We bake in a preheated oven at 190°C, on the heating elements for 45 minutes. Once the surface has a reddish color, it means it is ready.

10
Done

We remove it from the oven and allow it to cool well.
We turn it over with the help of a straight platter.
We cut it into pieces and serve.
